Vegan corn chowder

I just made this for dinner tonight it was so yummy! It’s a variation on Chris Carr’s recipe from the crazy sexy diet.

Cashew cream sauce
-1 cup raw organic cashews
-rinse and soak over night in water
-then blend in high speed blender until smooth

Kombu broth
-4-5 pieces of kombu seaweed
-2 cups of water
-a little onion and garlic powder
Let simmer for 40 min then remove seaweed

In a large pot add
-one onion
-1 clove of garlic chopped
-1-2 tbs of olive oil
-3 sticks of celery chopped
-4 carrots chopped
-2 tsp of thyme
-4 ears of corn, corn cut off

Let summer for 10 min then add kombu broth and cashew cream and let simmer on low for another few minutes. Stir often so it doesn’t burn!

You can add more water to thin and an optional veggie bullion for more flavor.
